Sweet Strawberry Vanilla Cupcakes

Calling all strawberry lovers! These cupcakes were made just for you, baked by your’s truly! Strawberry is one of the best flavors out there. It’s just a fact. 🍓

The combination of vanilla and strawberry with these cupcakes is so light and fresh! They are a great Valentines Day treat or for any occasion in Spring and Summer!

The Frosting:

Ok, but this frosting reminds us of strawberry ice cream. It’s that good! We used our favorite frosting recipe ever, and added blended freeze dried strawberries to it! The strawberries give it a pretty pink color, and a nice strawberry flavor, without having to make a strawberry puree. And the color is all natural!

The Vanilla Cupcakes:

For the vanilla cupcakes, we used Natasha’s Kitchen recipe. They turn out soft, fluffy, and perfectly delicious every time!

Tips and Tricks:

-Use softened butter. Creaming the butter and sugar together is so much easier when the butter is softened. So just let the butter sit out for a few hours before you start baking. Also, if you need it sooner, you can microwave it on low to soften it (without melting it).

-Don’t over mix the batter! Over mixing the batter results in a tougher cupcake.

-Let the cupcakes cool completely before frosting. This is pretty important because if you start frosting them while they are still warm, the frosting will melt, and it’ll just be sad. ☹️

-We used a Wilton 1M tip for frosting the cupcakes. And toped them with a freeze dried strawberry.

Description

Ingredients

For Vanilla Cupcakes:

-1 1/4 cups all-purpose flour

-1 1/4 tsp. baking powder

-1/2 tsp. salt

-1/2 cup softened butter

-3/4 cups white sugar

-2 large eggs

-2 tsp. vanilla extract

-1/2 cup buttermilk

For Strawberry Whipped Cream Cream Cheese Frosting:

-6oz. softened cream cheese

-1 1/2 cups powdered sugar

-1 tsp. vanilla extract

-1 cup whipped heavy cream

-1/4 cup blended freeze dried strawberries


Instructions

1. Preheat oven to 350 degrees, and line a cupcake tin with 12 cupcake liners.

2. Whisk together 1 1/4 cups all-purpose flour, 1 1/4 cups baking powder, and 1/2 tsp. salt. Set aside.

3. In a separate bowl, cream together 1/2 cup softened butter and 3/4 cups white sugar. Beat that for about 3 minutes or until fluffy.

4. In thirds, alternate adding the dry ingredients with the buttermilk. The batter will be thick.

5. Scoop batter into the cupcake liners evenly.

6. Bake the cupcakes at 350 degrees for 20-22 minutes or until a toothpick inserted comes out clean.

7. Let the cupcakes fully cool before frosting.

8. Enjoy!

 

For the Frosting:

1. Whip together 6oz. softened cream cheese with 1 1/2 cups powdered sugar and 1 tsp. vanilla extract.

2. In a separate bowl, whip up 1 cup whipped heavy cream until stiff peaks.

3. Fold the whipped cream into the cream cheese mixture until combined. Then mix in 1/4 cup blended freeze dried strawberries.
