Browned Butter Cornbread Madeleines

You have to try these Browned Butter Cornbread Madeleines! Soft, moist, fluffy, and almost too easy to make! This cornbread never fails to disappoint, so treat yourself and make a batch!

Now this isn’t your classic cornbread. Usually you’ll see it in muffin form, or a skillet. But this is our favorite way! They are so pretty, yet so tasty and easy! Great for a weeknight dinner, or for a weekend dinner when you have guests over. This is the only way we make it!

Of course this cornbread is more than delicious on it’s own, but we love serving it with a nice bowl of warm chili.

The Ingredients:

Cornmeal + All Purpose Flour:  We like using a 1-1 to flour and cornmeal. Some recipes will use more flour than cornmeal, but we find that it doesn’t quite have the best texture that you look for in cornbread.

White Sugar: We actually used less sugar than most recipes. And it’s the perfect amount of sweetness! Not overly sweet, yet not under-sweetened.

Salt: Always salt! It enhances the flavors.

Baking Powder: 1 Tbsp. of baking powder makes for the perfectly fluffy and soft cornbread madeleines.

Buttermilk: We love using buttermilk because it makes the cornbread extra moist, and adds a nice flavor!

Eggs: Another key ingredient in baking.

Browned Butter: Butter is one of the main flavors in cornbread, and browning it makes this recipe even better!

Vegetable Oil: The vegetable oil keeps the madeleines soft, and moist!

Storing:

These store so well! Place them in an airtight container out at room temp. for up to 3 days. Then once you’re ready, pop them in the microwave for about a minute, and you are ready to enjoy!

Browned Butter:

The secret to making this recipe stand out from the rest… is browned butter! Browned butter adds a depth of flavor to the madeleines.

If you have never browned your butter before, now is the time to do so! It doesn’t take too much time and effort, but once you taste the results, you just might wanna use browned butter in everything! 😛

Ingredients

-1 cup all-purpose flour

-1 cup cornmeal

-1/2 cup white sugar

-1 Tbsp. baking powder

-1/2 tsp. salt

-1 1/4 cups buttermilk (room temp.)

-2 large eggs (room temp.)

-1/2 cup browned butter

-2 Tbsp. vegetable oil


Instructions

1. Preheat oven to 350 degrees. Lightly grease a madeleine pan with oil spray. Set aside.

2. In a large bowl combine together your dry ingredients: 1 cup all-purpose flour, 1 cup cornmeal, 1/2 cup white sugar, 1 Tbsp. baking powder, and 1/2 tsp. salt.

3. In a separate bowl whisk together 1 1/4 cups buttermilk, 2 large eggs, 1/2 cup browned butter, and 2 Tbsp. vegetable oil.

4. Pour the wet ingredients into the dry and mix until combined.

5. Evenly divide the batter among the madeleine pan. This recipe makes 18 madeleines.

6. Bake the madeleines for 15 minutes, or when a toothpick inserted comes out clean.

7. Let them cool for 5 minutes before serving.

8. Enjoy!
