The Best Homemade Breakfast Burritos!

Start the day on the right foot with these Homemade Breakfast Burritos! A warm flour tortilla wrapped around mozzarella cheese, crispy potatoes, scrambled eggs, flavorful sausage, sliced avocado, and fresh pico de gallo – made from scratch!

Breakfast Burritos are one of our favorite things ever, and surprisingly we haven’t made one on here yet, so we figured it’s about time, and these are the best we’ve ever had!

Homemade Flour Tortillas:

We use homemade flour tortillas for this recipe, but you can also use store-bought! They will work great, but we just love the homemade ones even better! Let us know if you want our recipe for them.

They make for such a great breakfast, or honestly even lunch or dinner! Any time of the day you enjoy these, they’re amazing!

Ingredients:

Flour Tortillas: We like making our own tortillas at home, but store-bought will also work in a pinch! Just make sure you use a 10-inch tortilla.

Mozzarella: We had mozzarella cheese on hand, but you can also use other types, like cheddar, pepper jack, etc…

Scrambled Eggs: For the eggs, we cooked them in a nonstick pan, and added a bit of salt and pepper to them!

Potatoes: The potatoes are roasted on a sheet pan with olive oil and some basic seasonings. We used russet potatoes, but other types will work too!

Homemade Pico De Gallo: Made with tomatoes, onion, lime juice, jalapeño, cilantro, salt, and garlic powder.

Can I freeze These?

Yes! These burritos freeze super well. To freeze the burritos: Let the ingredients cool down, before assembling, so the burrito doesn’t get soggy, and just add on your ingredients, except for the avocado and pico de gallo. Wrap the in aluminum foil, and freeze for up to 3 months. To reheat the burritos: Remove from foil, cover in a damp paper towel, and microwave for 3-4 minutes. Add the avocado, pico de gallo, and enjoy!
