The Best Cowboy Caviar!

If you’re looking for a healthy and easy dip that comes together in less than 5 minutes, then this cowboy caviar is it! It’s loaded with beans, corn, tomatoes, avocado, bell peppers, onions, and much more! It’s the perfect summer potluck appetizer!

This Cowboy Caviar is delicious on it’s own, or one of our favorite ways is serving it with tortilla chips! And also if you’re eating it just by itself, adding some sort of meat, like ground beef or chicken, is a great option too!

Ingredients:

Beans: We like using a mix of black beans, and black-eyed peas for the best combination!

Corn: Corn is a must in this, because it adds a nice pop of color and flavor!

Bell Peppers: You can use any color you’d like. We used red and orange.

Onion: Red onion is the best, but if a white onion is all you have on hand, that’ll work fine!

Avocado: And of course, we just had to add avocado!

Jalapeño: You can skip this if you’d like, but it adds flavor, without it being too spicy!

Tomatoes: Roma works the best. But be sure to dice them small!

Lime Juice: This recipe uses the juice from one lime.

Cilantro: We love adding cilantro to this cowboy caviar!

Ingredients

For the dip:

1 1/2 cups black beans (cooked, rinsed, and drained)

1 1/2 cups black-eyed peas (cooked, rinsed, and drained)

1 1/2 cups corn, drained

1 bell pepper, finely diced

1/2 cup red onion, finely chopped

1 diced avocado

1 jalapeno, seeded and thinly diced

1 cup roma tomatoes, diced

juice from 1 lime

3/4 cups cilantro

For the dressing:

2 Tbsp. + 1 tsp. red wine vinegar

2 Tbsp. olive oil

1 tsp. ground cumin

1/2 tsp. honey

1 1/2 tsp. salt

1/2 tsp. black pepper


Instructions

1. In a large serving bowl, mix together 1 1/2 cups cooked black beans, 1 1/2 cups cooked black-eyed peas, 1 1/2 cups corn, 1 finely diced bell pepper, 1/2 cup finely chopped red onion, 1 diced avocado, 1 seeded and diced jalapeno, 1 cup diced roma tomatoes, juice from 1 lime, and 3/4 cups cilantro. Mix that all together.

2. Now in a separate small bowl, whisk together 2 Tbsp. + 1 tsp. red wine vinegar, 2 Tbsp. olive oil, 1 tsp. ground cumin, 1/2 tsp. honey, 1 1/2 tsp. salt, and 1/2 tsp. black pepper.

3. Pour the dressing over the dip, and mix it all together. Serve with tortilla chips and enjoy!
