Taylor Swift's Chai Sugar Cookies with Eggnog Icing!

Taylor Swift just released her new album today, so we made her internet-famous Chai Sugar Cookies with Eggnog Glaze and we were surprised at how good they are! A soft, melt-in-your-mouth cookie full of all the chai flavors, with a sweet eggnog glaze that’s perfect for the Holidays!

We’ve been making LOTS of cookie recipes lately, but ’tis the season! And who doesn’t love cookies, right?! And especially when it involves Chai!

The Chai Sugar Cookie Dough:

This Chai Sugar Cookie Dough is a little different than most cookie doughs. It’s made with oil and powdered sugar. These two ingredients aren’t traditional in most cookie recipes, but they turn out super soft, and melt-in-your-mouth delicious! Plus it’s only made in one bowl!

The Eggnog Icing:

The Eggnog Icing is super simple and literally makes these cookies irresistible! All you have to do is whisk together a few simple ingredients: Powdered sugar, nutmeg, cinnamon, and of course eggnog! You can use store-bought or homemade.

We are big fans of anything chai, so needless to say we are huge fans of these cookies! They have the perfect texture, with a soft and slightly chewy interior, with a crisp exterior.

Ingredients

Units Scale

For the Chai Cookies:

1/2 cup softened butter

1/2 cup vegetable oil

1/2 cup white sugar

1/2 cup powdered sugar

1 large egg

2 tsp. vanilla extract

2 cups all-purpose flour

1/2 tsp. baking soda

1/4 tsp. salt

1 chai tea bag

For the Eggnog Icing:

1 cup powdered sugar

1/4 tsp. ground nutmeg

1/4 tsp. ground cinnamon

3 Tbsp. eggnog


Instructions

1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

2. In a medium-sized bowl with a hand mixer, cream 1/2 cup softened butter until creamy. Add in 1/2 cup vegetable oil, 1/2 cup white sugar, 1/2 cup powdered sugar, 1 large egg, and 2 tsp. vanilla extract.

3. Beat that until combined, then add in the dry ingredients: 2 cups all-purpose flour, 1/2 tsp. baking soda, 1/4 tsp. salt, and the contents of 1 chai tea bag.

4. Beat that again until a very soft dough forms. Cover the bowl with plastic wrap, and chill in the fridge for at least 1 hour.

5. Scoop out 12 cookies onto the lined baking sheet, and bake at 350 degrees for about 13 minutes. Let the cookies cool while making the icing.

6. To make the Eggnog Icing in a small bowl, whisk together 1 cup powdered sugar, 1/4 tsp. ground nutmeg, 1/4 tsp. ground cinnamon, and 3 Tbsp. eggnog.

7. Spoon the icing over the cooled cookies, sprinkle with a bit of cinnamon, and let the icing harden for about 10-15 minutes.
