Raspberry Valentine's Day Croffles

These Raspberry Valentine’s Day Croffles are the only thing you need to make this St. Valentine’s day! They are sweet, crisp, fruity and so adorable! And topped with a small dusting of powdered sugar, it makes for the prettiest pink brunch!

If you’re looking for the perfect Valentine’s day breakfast, look no further because this is it! A flakey buttery croissant cooked in a waffle iron, to make for the perfect crispy texture. Topped off with a homemade whipped cream and fresh berries.

Ingredients:

Croissants: Use uncooked croissants. Homemade or store-bought frozen croissants will work!

Heavy Cream + food coloring: Heavy whipping cream is for the whipped cream on top of the croffle. We like adding a bit of pink gel food coloring to make it extra festive for Valentine’s Day, but that’s optional!

Powdered Sugar: Powdered sugar is used in the whipped cream and for dusting on top of the croffle.

Raspberries: You can also top it off with some fresh strawberries instead!

We find that using mini croissants works nicely because the size is perfect! But if you want to use regular sized croissants, just use a bigger waffle iron. Also, note that the cooking time will be different than if you use mini.

We love making them extra fancy by adding the whipped cream and raspberries, but you can also just top your croffle with a dust of powdered sugar and it’ll still be amazing!

These Raspberry Valentine’s Day Croffles are the only thing you need to make this St. Valentine’s day! They are sweet, crisp, fruity and so adorable! And topped with a small dusting of powdered sugar, it makes for the prettiest pink brunch!


Ingredients

8 mini uncooked croissants

1 cup heavy whipping cream

1/4 powdered sugar + for dusting

pink gel food coloring

8 oz. raspberries


Instructions

1. First, make the whipped cream. To a small bowl, add in 1 cup heavy whipping cream, 1/4 powdered sugar, and pink gel food coloring. The gel coloring amount depends on how dark of a color you want, so just add as much or as little as you want. Beat that with an electric hand mixer until stiff peaks form.

2. Heat up your waffle iron, then place on one mini croissant in the middle. There is no need to grease the iron, since the croissant is buttery. We cooked ours for about 3 minutes. Repeat with the remaining croissants.

3. Let the croffles cool for a few minutes, then pipe on the cream. Top with some raspberries and dust on some powdered sugar.
