Greek food is one cuisines ever! It’s fresh, packed with herbs, and of course feta (our favorite!) This salad made with pasta, crunchy cucumbers, sweet cherry tomatoes, chickpeas, colorful red onion, red and green bell peppers, salty olives, and creamy feta. It’s kinda the perfect salad!

Father’s Day is coming up, so if you’re planning on a BBQ, this would be the perfect side dish, and it’s sure to be a winner with everyone!

The Greek Yogurt Herb Dressing:

The dressing really does make a salad. This dressing is so simple yet so good! The variety of fresh herbs adds so much flavor, and makes it smell so fresh! For the herbs, we just used whatever we had in our garden. Basil, oregano, sage, and thyme. They all pair perfectly with the other ingredients in the salad.

Mediterranian Inspired Pasta Salad

This colorful Mediterranean Inspired Pasta Salad is tangy, bright, and flavorful, made with simple and fresh ingredients! It’s tossed in a creamy greek yogurt herb dressing that’s oh so good! This will become your new go-to Summer pasta salad!


Ingredients

For the Salad:

8 oz. short cut pasta

1 large cucumber, chopped

1pint cherry tomatoes, halved

1 cup cooked chickpeas

1/2 red onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

1 can black olives, halved

8 oz. feta, diced

For the Greek Yogurt Herb Dressing:

1/2 cup greek yogurt

2 Tbsp. lemon juice

1 Tbsp. olive oil

1/2 tsp. salt

2 cloves garlic

1/4 cup fresh herbs (we used basil, oregano, sage, and thyme)


Instructions

1. In a very large bowl, add in all of the ingredients. 8 oz. cooked pasta, 1 large chopped cucumber, 1-pint halved cherry tomatoes, 1 cup cooked chickpeas, 1/2 diced onion, 1 green and 1 red bell pepper (diced), 1 can halved black olives, and 8 oz. diced feta cheese. Mix that all together.

2. To make the Greek Yogurt Herb Dressing: In a blender or food processor, blend together 1/2 cup of greek yogurt, 2 Tbsp. lemon juice, 1 Tbsp. olive oil, 1/2 tsp. salt, 2 cloves garlic, and 1/4 cup fresh herbs. Once smooth and creamy, drizzle that onto the salad, give it a mix, and you’re ready to enjoy!
