Creamy Coconut Mango Popsicles!

Warm weather and these Creamy Coconut Mango Popsicles go hand in hand. They are sweet, creamy, refreshing, and only require two ingredients! This recipe is healthy too, and the perfect treat to enjoy on a hot summer day!

In the PNW it’s just starting to warm up, and we could not be more excited for all the summer recipes! So today we thought it’s time to share another popsicle recipe, and you guys these are super delicious!

So we know coconut isn’t a flavor everyone loves, but we’re pretty sure even if you don’t like coconut, we’re sure you’re gonna love these! The coconut milk makes the popsicles super creamy, and adds a nice tropical flavor, pairing great with the mango!

Here’s an overview of the ingredients you need to make these popsicles!

Fresh Mango Chunks: So we like using fresh mangos, because usually, they tend to be riper than frozen mangos, therefore also sweeter. But in a pinch, frozen will work too. Just be sure to defrost them before making the recipe.

Canned Coconut Milk: The coconut milk is what makes the popsicles creamy, but be sure to use canned coconut milk and not the one from the carton.

Maple Syrup: This ingredient is optional. And you can add it to your liking, depending on how sweet your mangos are.

Ingredients

Units Scale

3 cups fresh diced mango

1 13.66 oz. can coconut milk

1 Tbsp. maple syrup, optional


Instructions

1. In a blender or food processor, blend together 3 cups fresh diced mango, 1 13.66 oz can coconut milk, and an optional 1 Tbsp. of maple syrup.

2. Once fully blended, transfer to popsicle the mold, and add in your sticks.

3. Freeze for 6 hours or overnight, and now you’re ready to enjoy!
