Ingredients
For French Toast Cubes:
1 loaf brioche bread
3 large eggs
1/2 cup milk
2 Tbsp. brown sugar
2 tsp. vanilla extract
1/2 tsp. ground cinnamon
1/4 tsp. freshly grated nutmeg
1 Tbsp. butter
For Cinnamon Sugar Coating:
5 Tbsp. melted butter
3/4 cup white sugar
2 Tbsp. ground cinnamon
For Homemade Vanilla Whipped Cream:
1/2 cup heavy whipping cream
2 Tbsp. white sugar
a splash of vanilla extract
Instructions
1. Slice the heels of your brioche bread loaf, and slice into 4 very thick slices. Now, cut off all of the edges, and cut each slice into quarters.
2. In a shallow dish beat 3 large eggs. Next, add the 1/2 cup milk, 2 Tbsp. brown sugar, 2 tsp. vanilla extract, 1/2 tsp. ground cinnamon, and 1/4 tsp. freshly grated nutmeg. Whisk that mixture together until combined.
3. Heat a griddle or pan over medium heat, and grease it with 1 Tbsp. butter.
4. Take your bread cubes and dip them into the egg custard for about 2 seconds on each side. Place on the heated griddle, and cook for about 1-2 minutes on all sides.
5. Mix together 3/4 cup white sugar, and 2 Tbsp. ground cinnamon. Brush 5 Tbsp. melted butter onto all of the cooked french toast cubes, and roll in the cinnamon sugar.
6. To make the Homemade Vanilla Whipped Cream, beat together 1/2 cup heavy whipping cream, 2 Tbsp. white sugar and a splash of vanilla extract until stiff peaks. Pipe swirls onto the french toast cubes, and enjoy!
