Chewy Funfetti Sugar Cookies!

These Cookies are soft, chewy, and the sprinkles make them so cute and festive! A simple sugar cookie dough, loaded with colorful sprinkles throughout each cookie. They are so nostalgic, and perfect for a birthday party, or just about any occasion at all!

It’s Tara’s birthday this week, so we thought these chewy funfetti sugar cookies would be the perfect recipe to share with you all!

They have the perfect chewy and soft texture inside and are slightly crispy on the outside. The ideal treat for kids and adults alike!

Ingredient Overview:

Butter: Use room temperature butter, so it creams easily. Also, we recommend using unsalted so you can control the amount of salt going into the dough.

White + Brown Sugar: Using brown sugar, along with white sugar, makes the cookie chewy. Use light brown sugar, so the cookie isn’t too dark.

Egg: This ingredient is pretty simple; one egg. Just make sure the egg is room temperature before using in the recipe.

Vanilla Extract: If you have clear vanilla extract on hand, use that! It will make sure your cookie doesn’t get too dark, but regular vanilla extract will also work just as well.

Flour: This recipe uses regular all-purpose flour.

Baking Soda + Cream of Tartar: Baking soda and cream of tartar are classic ingredients in a sugar cookie, which give them that classic texture.

Salt: Salt balances out the sweetness in the cookie.

Sprinkles: Be generous with the sprinkles! Also, we find that using better quality sprinkles work best, since they don’t bleed into the cookie when you bake them.

One thing we love about this recipe is that the dough is made in one bowl, which makes things extra easy! Just beat together your butter, with the sugars, egg, and vanilla, add in your dry ingredients, and sprinkles!

Ingredients

Units Scale

3/4 cups softened butter

1 cup white sugar

1/4 cup light brown sugar, packed

1 large egg, room temp.

1 tsp. vanilla extract

2 1/4 cups all-purpose flour

3/4 tsp. baking soda

1/2 tsp. cream of tartar

1/2 tsp. kosher salt

1/2 cup rainbow sprinkles


Instructions

1. Line a large baking sheet with parchment paper, and preheat the oven to 350 degrees F.

2. In a large bowl, with an electric hand mixer, cream together 3/4 cups softened butter, 1 cup white sugar, and 1/4 cup packed light brown sugar. Cream until light and fluffy, about 2 minutes.

3. Add in 1 large egg, and 1 tsp. vanilla extract. Beat that until fully combined. Now, add in 2 1/4 cups all-purpose flour, 3/4 tsp. baking soda, 1/2 tsp. cream of tartar, and 1/2 tsp. kosher salt.  Beat that until a soft dough forms.

4. Once a dough forms, fold in 1/3 cup rainbow sprinkles, using a spatula. Don’t over-mix the dough. Scoop the cookies onto a lined baking sheet and bake in the preheated oven at 350 degrees for 10-12 minutes. Rotate the pan halfway through the baking.

6. Let cookies cool for a few minutes on a cooling rack. Enjoy!

  1. These cookies are delicious! However, they are too sweet for me so I will try them again removing 1/4 cup making it 3/4 cup brown sugar and 1/4 cup sugar. I feel they would be better tasting and better for your health, mostly because I’m trying to avoid becoming diabetic!
