White Christmas Cupcakes

“I’m dreaming of a white Christmas.” Bake your own winter wonderland with these adorable White Christmas Cupcakes! A moist white cupcake made with a fluffy whipped cream frosting that’s sure to brighten up any frosty winter day!

We are OBSESSED with these cupcakes! These are the first in our new series where we turn Christmas songs into desserts! White Christmas is a classic song, so we thought we’d keep it sweet and simple with these darling sparkly cupcakes!

With this recipe we tried to keep everything as white as possible! So we didn’t use any eggs in the batter, or vanilla which would turn them a more golden color. Instead of vanilla, we used almond extract! The almond flavor is slight, but it adds a depth of flavor.

We haven’t had a cupcake recipe yet on the blog, which is funny because cupcakes are one of our favorite desserts!

These cupcakes make us so happy! They are the softest, moistest, and fluffiest cupcakes, like ever! And the frosting! It’s creamy, tangy, lightly sweet, and airy! We use this recipe all the time and it always turns out amazing!

What Makes these Cupcakes so good?

Lots of things! First of all, using oil instead of butter makes for an extra moist cupcake! Second, the frosting! SO GOOD! You need to try it! And last but not least, just how simple they are! We were actually surprised at how quick and easy they were!

How To (Actually) Eat a Cupcake!

So think about it. Doesn’t this just make sense? This way you get the perfect ratio of cream to cake! All you do is tear (or cut) half of the bottom of the cupcake, and place it on the top. It’s also a lot cleaner to eat. #hack

Ingredients

For Cupcakes:

-1 3/4 cups all-purpose flour

-1 tsp. baking powder

-1/2 tsp. baking soda

-1/4 tsp. salt

-1 cup white sugar

-1 cup milk

-1 tsp. white vinegar

-1/2 cup oil

-1 tsp. almond extract

For Frosting:

-8 oz. block cream cheese, softened

-2 cups powdered sugar

-1 1/2 cups heavy cream

Topping:

-white sprinkles of choice


Instructions

1. Preheat oven to 350 degrees, and line a cupcake tin with 12 cupcake liners.

2. Whisk together 1 3/4 cups all-purpose flour, 1 tsp. baking powder, 1/2 tsp. baking soda, 1/4 tsp. salt, and 1 cup white sugar. Set aside.

3. In a separate bowl, whisk together 1 cup milk, 1 tsp. white vinegar, 1/2 cup oil and 1 tsp. almond extract.

4. Pour the dry mixture into wet the and mix just until combined.

5. Scoop batter into the cupcake liners evenly.

6. Bake the cupcakes at 350 degrees for 15 minutes or until a toothpick inserted comes out clean. Make sure the edges don’t get too browned.

7. Let the cupcakes fully cool before frosting.

8. Enjoy!

For Frosting:

1. Whip together 6oz. softened cream cheese with 1 1/2 cups powdered sugar and 1 tsp. vanilla extract.

2. In a separate bowl, whip up 1 cup whipped heavy cream until stiff peaks.

3. Fold the whipped cream into the cream cheese mixture until combined.
