Sunset Raspberry Orange Cake.

This pretty and pink Sunset Raspberry Orange Cake is soft, moist, and lightly sweet! It consists of three layers of a citrusy orange cake, with raspberry jam in between each layer, and is topped with a light and fluffy homemade whipped cream cheese frosting!

This Sunset Raspberry Orange Cake is definitely one of our favorite things that we’ve ever made! It’s just so Summery and bright, with the gorgeous flowers, oranges, and raspberries on top, and it tastes just as amazing as it looks!

Ingredients:

Flour: This recipe uses all-purpose flour, which is a basic ingredient most baked goods.

Sugar: Also, another basic ingredient in baking!

Baking Powder: Baking powder is a leavening ingredient, which makes the cake rise.

Salt: Even in desserts, salt is added to bring out more flavor, and contrast the sweetness a bit.

Eggs: Another common ingredient in most cakes!

Milk: Using whole milk works best, but you can also use 2% milk.

Orange Juice + Zest: These ingredients is what makes the cake orange flavored! Be sure that you use fresh orange juice and fresh orange zest. It makes a big difference! 

Oil + Butter: We like using a combination of oil and butter. The oil makes the cake extra moist, and the butter adds a lot of flavor! Be sure to use a flavorless oil, like vegetable or canola oil.

Vanilla Extract: We love adding vanilla extract to our desserts, because it adds a really nice flavor!

This recipe is actually pretty simple to make too! You just have to make the orange cake batter, bake it, assemble the cake with the raspberry jam, frost and decorate it with the whipped cream cheese frosting, and that’s all there is to it!

We love topping this cake with different kinds of pink flowers and chamomile, which adds such a pretty touch! We also added dried orange slices and of course fresh raspberries. But you can do any of your favorite toppings, or whatever you’d like!

Ingredients

Units Scale

Orange Cake:

2 + 3/4 cups all-purpose flour

1 + 3/4 cups white sugar

3 + 1/2 baking powder

1/2 tsp. salt

3 large eggs

1/2 cup milk

1 cup orange juice

1/2 cup oil

1/2 cup butter, melted

1 tsp. vanilla extract

1 Tbsp. freshly grated orange zest

For Assembling:

1 jar raspberry jam (13 oz.)

For Frosting:

2 cups heavy whipping cream

6 oz. cream cheese, room temp.

2/3 cups powdered sugar

1/2 tsp. vanilla extract


Instructions

1. To a small bowl, add in your dry ingredients. 2 + 3/4 cups all-purpose flour, 1 + 3/4 cups white sugar, 3 + 1/2 baking powder, and 1/2 tsp. salt. Whisk that until combined, then set it aside.

2. To a large bowl, add in 3 large eggs, 1/2 cup milk, 1 cup orange juice, 1/2 cup oil, 1/2 cup melted butter, 1 tsp. vanilla extract, and 1 Tbsp. freshly grated orange zest. With an electric hand mixer, beat that until combined.

3. Now, add in the dry ingredients, and beat that until combined. Be sure not to over-mix!

4. Evenly pour the batter into three 8-inch, greased and lined cake pans. Bake them at 350 degrees for about 20 minutes, or until a toothpick inserted comes out clean. Let the cake layers cool completely before frosting!

5. To make the frosting, beat together 6 oz. cream cheese, 2/3 cups powdered sugar, and 1/2 tsp. vanilla extract. Beat that until smooth and creamy. Whip up 2 cups of heavy whipping cream until stiff peaks, and fold that in to the cream cheese mixture.

6. Place the first cake layer onto a cake stand. Add some of the frosting into a piping bag, and pipe around the edge of the cake to create a wall to keep the jam in.

7. Now to the center, evenly spoon in the raspberry jam and smooth it out. Repeat once more, and finish it off with the last cake layer.

8. With the remaining frosting, we made three different shades of pink with food dye! This step is optional. You can either dye all of the remaining frosting the same color, or just skip the dye totally.

9. Now, frost the cake, and decorate with flowers and dried orange slices.

10. Slice and enjoy!
