Strawberry Lemonade Swirl Snack Cake

Keeping things sweet with this Strawberry Lemonade Swirl Snack Cake! Soft and moist lemon cake with a homemade strawberry jam swirled throughout the cake. It’s topped with more jam, and our favorite whipped cream frosting.

Two of our favorite flavors are strawberry and lemon, so needless to say, this cake is like one of our favorite things ever! You NEED to make this!

The Inspiration:

We got the inspiration for this cake is from Halfbakedharvest. We had made her recipe for “Swirled Blackberry Lavender Sheet Cake”, and it was so delicious! We thought about making changes to the recipe, like making it lemon instead of vanilla cake, strawberry jam instead of blackberry, making it a smaller size, and lastly making our own whipped cream frosting. So that’s how this cake came to be, and we couldn’t be happier with how it turned out! 🙂

The Lemon Cake:

Ok so the cake. It’s absolutely superb! Soft, moist, tender, and has a delightful zing from the bright lemon! You’d think it couldn’t get any better, but it does! We swirl in some of that homemade strawberry jam making it pretty amazing, resembling strawberry lemonade! 🍓 🍋

So what is a Snack Cake?

Since this cake isn’t a layered cake, or a full sized sheet cake… it’s a Snack Cake meaning it’s great for (obviously a snack), but also a tea party, picnics, or basically just when you need a smaller cake.

There are 3 main things you need to make for this cake. The strawberry jam, the lemon cake, and the frosting (our personal favorite). Each thing is pretty simple to make!

The Strawberry Jam:

Now the jam isn’t your traditional jam. It’s not a jelly-like consistency, but rather just a thick strawberry sauce. It’s made with just 3 simple ingredients: strawberries, sugar, and lemon! 

The Frosting:

The OG’s know that this is the one and only frosting that we use on our cakes! It’s a Whipped Cream Cream Cheese Frosting that’s light, fluffy, tangy, and silky smooth! It pairs perfectly with the zesty lemon cake and sweet strawberry jam.

We decorated our cake with halved strawberries, twisted lemon peel, and some camomile flowers, because they are edible and one of our favorite flowers! This cake is rustic, yet so so so cute!

Ingredients

Scale

For Strawberry Jam:

4 cups fresh or frozen strawberries

1/4 cup white sugar

1 Tbsp. lemon juice

For the Lemon Cake:

2/3 cup vegetable oil

1/4 cup + 1 Tbsp. greek yogurt

2 large eggs

2/3 cups + 2 Tbsp. white sugar

2 tsp. vanilla extract

1 Tbsp. lemon zest

1/4 cup + 1 Tbsp. lemon juice

1/2 cup milk

2 cups all-purpose flour

1 tsp. baking powder

1/4 tsp. baking soda

3/4 tsp. salt

For Whipped Cream Frosting:

3 oz. cream cheese, room temp.

3/4 cup powdered sugar

1/4 tsp. vanilla extract

1 cup heavy whipping cream


Instructions

To Make the Jam:

1. To a large pot over high heat add 3 cups of strawberries, 1/4 cup white sugar, and 1 Tbsp. lemon juice. Bring the mixture to a boil. Once boiling, mash the strawberries with a fork or potato masher. Let that cook for about 10 minutes or until the jam has reduced and thickened. Let jam cool completely before using it on the cake.

To Make the Lemon Cake:

1. Preheat oven to 350 degrees and line a 8×8 baking sheet with parchment paper.

2. In a large bowl beat together 2/3 cups vegetable oil, 1/4 cup + 1 Tbsp. greek yogurt, 2 large eggs, 2/3 cup + 2 Tbsp. white sugar, 2 tsp. vanilla extract, 1 Tbsp. lemon zest, and 1/4 cup + 1 Tbsp. lemon juice.

3. Next add in 2 cups of all-purpose flour, 1 tsp. baking powder, 1/4 tsp. baking soda, and 3/4 tsp. salt. The batter will be thick. Slowly beat in 1/2 cup milk. Don’t overmix.

4. Pour the batter into the prepeared baking pan. Evenly spoon on 1/2 of the jam all over the cake, and swirl it in with a knife. Don’t over-swirl it.

5. Bake at 350 degrees for 30-32 minutes or until a toothpick inserted comes out clean.

6. Remove from pan, and let cool completely before frosting.

 

To Make the Frosting:

1. In a large cream together 3 oz. cream cheese, 3/4 cup powdered sugar, and 1/4 tsp. vanilla extract.

2. In a separate bowl whip 1 cup of heavy whipping cream until stiff peaks form.

3. Gently fold the whipped cream into the cream cheese mixture until combined.

 

To Frost the Cake:

1. Evenly spread a thin layer of jam over the cooled cake, then spread on the frosting. Finally, scoop dollops of the remainder of the jam over the cake, and swirl that in.

2. Top the cake with halved strawberries and lemon.

3. Enjoy!
