We looove a Classic Carrot Cake, but this is our favorite one like ever! Full of spices, most, fluffy, tender! Gosh! It’s just so good!

When we were testing this recipe, we thought of adding some cinnamon to the frosting, and… that was probably one of the best decisions ever! It’s a really small addition, but it literally makes the frosting SO GOOD, and pairs perfectly with the Carrot Cake!

In this recipe we sure didn’t skip out on the spices, but that’s what makes the cake so good! And we love adding Cardamom because it adds a sweet, warming, fragrant flavor to the cake.

The Frosting:

Typical recipes for carrot cake use a buttercream. But we love the texture of whipped cream frosting! We find that it’s not overly sweet, and pairs better with the cake. It’s fuffy, velvety smooth, and tangy from the added cream cheese.

Here’s a quick overview of the recipe and its main ingredients.

Flour + Sugars: Basic ingredients in a cake.

Baking Soda + Baking Powder: This is what makes the cake rise, making it fluffy, and soft.

Spices: We used a variety of different spices, which makes the cake so flavorful!

Oil: Make sure you use a flavorless oil. Oil makes the cake moist.

Greek Yogurt: Greek Yogurt, along with the oil makes the cake moist. You can’t taste it at all! And sour cream also works as a substitute.

Eggs: Another basic and must have ingredient in most baked goods.

Carrots: Of course the main, and most important ingredient in carrot cake. Finely grating the carrots results in a better texture, and while measuring, make sure it’s packed.

This 6-inch Carrot Cake with Cinnamon Whipped Cream Frosting is a must-make this Spring! From it’s soft, moist, perfectly spiced crumb, to the lightly sweet and fluffy cinnamon cream cheese frosting, it’s absolutely irresistible! 


Ingredients

For the cake:

-1 + 2/3 cups all-purpose flour

-1 tsp. baking soda

-1/2 tsp. baking powder

-1/2 tsp. salt

-1 1/2 tsp. ground cinnamon

-1/2 tsp. freshly grated nutmeg

-1/2 tsp. ground ginger

-1/2 tsp. ground cardamom

-1/4 tsp. all-spice

-1/4 tsp. ground cloves

-1/2 cup flavorless oil

-3/4 cups brown sugar, packed

-1/4 cup white sugar

-1/2 cup greek yogurt (or sour cream), room temp.

-1 tsp. vanilla extract

-2 large room temp. eggs

-1 cup freshly grated carrots, packed

For the Frosting:

-5 oz. softened cream cheese

-1 cup powdered sugar

-1/2 tsp. vanilla extract

-1/2 tsp. cinnamon

-1 1/2 cups heavy whipping cream


Instructions

1. In a medium sized bowl, whisk together 1 + 2/3 cups flour, 1 tsp. baking soda, 1/2 tsp. baking powder, 1/2 tsp. salt, 1 1/2 tsp. ground cinnamon, 1/2 tsp. freshly grated nutmeg, 1/2 tsp. ground ginger, 1/2 tsp. ground cardamom, 1/4 tsp. all-spice, and 1/4 tsp. ground cloves. Set that aside.

2. Now in a large bowl, whisk together 1/2 cup flavorless oil, 3/4 cups brown sugar, packed, 1/4 cup white sugar, 1/2 cup greek yogurt (or sour cream), 1 tsp. vanilla extract, and 2 large eggs. Once combined, add in 1 cup packed grated carrots.

3. Add in the dry ingredients, and mix until combined. Pour batter into 2 6-inch cake pans, lightly greased, and lined with parchment paper.

4. Bake in a preheated oven at 350 degrees for 30-35 minutes, or until a toothpick inserted comes out clean. Let cool on a cooling rack, and meanwhile, make the frosting.

5. Beat together 5 oz. softened cream cheese, 1 cup powdered sugar, 1/2 tsp. vanilla extract, and 1/2 tsp. cinnamon. In another bowl, whip up 1 1/2 cups heavy whipping cream, and fold that in with the cream cheese mixture.

6. Frost the cake, and now you’re ready to serve! Enjoy!
