Can you believe it’s already October?! Time flies! Before we know it, it’ll be Halloween! So to celebrate baking season, we are sharing our recipe for these Pumpkin Coffee Cake Muffins! We are so for this one *if you couldn’t already tell!* They are just so amazing!

So when we were deciding on what to make, pumpkin muffins popped into our head! But we asked ourselves ” How can we take these to next level?!” And the answer simple answer is, add on a sweet, crunchy streusel, that’s just like the streusel on coffee cake! And that’s how *dare we say* the perfect muffin was invented!

Also, did you know, this batter for these muffins also makes pumpkin bread, pumpkin cupcakes, and a pumpkin cake! That’s why you need to save this recipe! It’s so versatile!

If you were to ask us right now what our favorite dessert is, it would be this! I mean, our favorite dessert changes daily, but this dessert will always be a Fall favorite, that never get’s old!

Ingredients:

Flour: Just use regular all-purpose flour!

White Sugar: The sugar is used in both the muffin batter and the streusel topping.

Brown Sugar: Using both white and brown sugar, gives these muffins the perfect balance.

Pumpkin Spice: If you don’t have pumpkin spice, cinnamon will work in a pinch. (But try to use pumpkin spice!)

Baking Soda + Baking Powder: The combination of these two gives the perfect rise to the muffins!

Salt: Salt brings out the flavor in these muffins.

Pumpkin Puree: Make sure it’s not pumpkin pie mix! Just use plain pumpkin puree.

Flavorless Oil: Some people use butter, but using oil makes these muffins extra moist, with the perfect crumb! Also, by flavorless oil, we mean any oil that doesn’t have a pronounced flavor. We used vegetable oil.

Vanilla Extract: Baked goods always need some vanilla!

Eggs: Eggs are necessary for this recipe.

Powdered Sugar: The powdered sugar is for the super simple glaze!

Milk: The milk is also for the glaze! That’s it! Only 2 ingredients!

Ingredients

For Muffins:

-2 cups all-purpose flour

-1/2 cup white sugar

-1/2 cup brown sugar, packed

–2 tsp. pumpkin spice

-2 tsp. baking soda

-1 tsp. baking powder

-1/4 tsp. salt

-15 oz. pumpkin puree (not pumpkin pie mix!)

-3/4 cups flavorless oil

-1 tsp. vanilla extract

-3 large eggs

For Streusel Topping:

-3/4 cups all-purpose flour -1/4 cup white sugar

-1/4 cup brown sugar, packed

-1 tsp. pumpkin spice

-6 Tbsp. melted butter

For Glaze:

-1 cup powdered sugar

-2 Tbsp. milk


Instructions

1. Preheat the oven to 350° F, and line a muffin pan with cupcake liners.

2. In a bowl, add in 2 cups all-purpose flour, 1/2 cup white sugar, 1/2 cup brown sugar, 2 tsp. pumpkin spice, 2 tsp. baking soda, 1 tsp. baking powder, and 1/4 tsp. salt. Whisk until combined.

3. In a large separate bowl, add in 15 oz. pumpkin puree, 3/4 cups flavorless oil, 1 tsp. vanilla extract, and three large eggs. Beat with a hand mixer until smooth.

4. Now add your dry ingredients into the wet ingredients, and beat until fully combined. Don’t overmix!

5. Evenly scoop batter into each cupcake liner.

6. To make the streusel topping, in a small bowl, add in 3/4 cups all-purpose flour, 1/4 cup white sugar, 1/4 cup brown sugar, packed, 1 tsp. pumpkin spice, and 6 Tbsp. melted butter. Mix with a fork until small clumps form.

7. Generously top your muffins with the streusel, and bake them in preheated oven for 20 minutes.

8. Meanwhile, to make the glaze whisk together 1 cup powdered sugar, and 2 Tbsp. milk.

9. Once out of the oven, drizzle on the glaze, and enjoy!
