Lucky Charms Cupcakes!

These sweet Lucky Charms Cupcakes are what you need to make this St. Patrick’s Day! Each one is a soft and moist vanilla cupcake, made with cereal milk to give it that cereal flavor. We topped them off with a fluffy whipped cream frosting, and of course, everyones favorite, the Lucky Charms Marshmallows!

St. Patrick’s Day is coming up, so make these to celebrate! We added a bit of food dye to the frosting to make it a pastel green, but that’s totally optional. And to go with the theme, we just couldn’t resist adding some gold sprinkles! (:

The Cupcake Batter:

This is a pretty simple cupcake batter! Just whisk together the dry ingredients, then set it aside. Once the wet ingredients are mixed, add the dry to the wet and that’s it! As mentioned earlier, we make these cupcakes with ‘cereal milk’. It’s a mixture of milk and cereal to let the cereal flavor infuse into the milk. Make sure to strain the cereal out before using it in the batter!

The Frosting:

This is our absolute favorite frosting that we use for all of our cupcakes! It’s a cream cheese whipped cream frosting, and it turns out perfectly light and fluffy each time. One thing we love about this frosting is how it’s not too sweet, but just the perfect amount of sweetness!

Of course, feel free to decorate these however you’d like! Instead of using gold sprinkles, you could even use gold leaf which would look great! Or if you want even more green color in your cupcakes, you can also add food dye to the cupcake batter.

We love the flavor of these cupcakes! The cereal milk adds a subtle flavor to the vanilla cupcake, and the lucky charms marshmallows on top pair perfectly with the lightly sweetened cream cheese frosting. The perfect combination!

Ingredients

For The Cereal Cupcakes:

1 + 3/4 cups all-purpose flour

1 cup white sugar

1 tsp. baking powder

1/2 tsp. baking soda

1/4 tsp. salt

3/4 cup Lucky Charms cereal

1 cup milk

1/2 cup flavorless oil

1 tsp. white vinegar

1 tsp. vanilla extract

For Vanilla Whipped Cream Frosting:

4 oz. cream cheese, softened

1 cup powdered sugar

1/2 tsp. vanilla extract

1 + 1/2 cup heavy whipping cream

green food dye, optional

lucky charms marshmallows, for topping

gold sprinkles or glitter, for topping


Instructions

1. To make the cereal milk: Simply add 3/4 cup Lucky Charms cereal and 1 cup milk to a bowl, and let it sit for 5 minutes. Then strain out the cereal so the milk is ready to use.

2. Now, whisk together your dry ingredients until combined. 1 + 3/4 cups all-purpose flour, 1 cup white sugar, 1 tsp. baking powder, 1/2 tsp. baking soda, and 1/4 tsp. salt. Set that aside.

3. To a large bowl, whisk together your dry ingredients: the cereal milk, 1/2 cup oil, 1 tsp. white vinegar, and 1 tsp. vanilla extract.

3. Once the wet ingredients are combined, add the dry ingredients to the wet. Whisk that until a smooth batter forms. Evenly divide the batter into a 12-lined cupcake pan. Bake the cupcakes at 350F for about 12-15 minutes, or until a toothpick inserted comes out clean. Let them cool completely.

4. While the cupcakes are cooling, make the frosting. To a large bowl, add 4 oz. cream softened cheese, 1 cup powdered sugar, and 1/2 tsp. vanilla extract. If you’d like, you can add some food dye at this point. Beat that with an electric hand mixer until combined. Now in a separate bowl, whip 1 + 1/2 cup heavy whipping cream until stiff peaks. Fold the whipped cream into the cream cheese mixture.

5. Pipe your cooled cupcakes and top with lucky charms marshmallows and gold sprinkles or glitter!
