Frosted Chocolate Peppermint Cookies

These sweet little Frosted Chocolate Peppermint Cookies are soft, chewy, chocolatey and of course have lots of peppermint flavor throughout the whole cookie! They are perfect to add to your Christmas gift cookie box, or to serve at your next Holiday party!

You guys! We are obsessed with these cookies. Like they are adorable bite sized, and the crushed candy canes on top just finish it off, and add to the holiday theme!

As if there wasn’t enough chocolate in the cookie, we add some mini chocolate chips to make it even better! Since they are also peppermint flavor, we make sure to add peppermint extract to the cookie dough, and the frosting. It is the perfect amount; not too much but just right!

Ingredients:

Butter: Use softened butter so it combines easily.

Sugars: We like using a mix of granulated sugar, and brown sugar.

Egg: Make sure your egg is room temperature!

Flavorings: For this recipe, we use vanilla extract and peppermint extract for peppermint flavor.

Flour: Flour is a basic ingredient in most cookies! This recipe uses all-purpose flour.

Cocoa Powder: Cocoa powder is what makes the cookies chocolate flavor.

Baking soda: Baking soda is what makes the cookies rise!

Salt: Salt balances out the sweetness in the cookie.

Chocolate Chips: We like using mini chocolate chips, but regular will also work fine!

These sweet little Frosted Chocolate Peppermint Cookies are soft, chewy, chocolatey and of course have lots of peppermint flavor throughout the whole cookie! They are perfect to add to your Christmas gift cookie box, or to serve at your next Holiday party!


Ingredients

For the Chocolate Cookies:

1/2 cup softened butter

1/2 cup granulated sugar

1/2 cup packed brown sugar

1 large egg, room temp.

1 tsp. vanilla extract

1 tsp. peppermint extract

1 cup all purpose flour

2/3 cup unsweetened cocoa powder

1 tsp. baking soda

a pinch of salt

1 cup mini chocolate chips

For the Frosting:

1/2 cup softened butter

2 + 1/4 cups powdered sugar

2 Tbsp. heavy whipping cream

1/2 tsp. peppermint extract

3 to 4 crushed candy canes, for topping


Instructions

1. To make the Chocolate Cookies: In a large bowl, with a hand mixer, cream together 1/2 cup softened butter, 1/2 cup granulated sugar, and 1/2 cup packed brown sugar. Beat that for a few minutes until light and fluffy. Add in 1 large egg, 1 tsp. vanilla extract and 1 tsp. peppermint extract. Beat until combined.

2. In a separate bowl, whisk together the dry ingredients; 1 cup all purpose flour, 2/3 cup unsweetened cocoa powder, 1 tsp. baking soda, and a pinch of salt.

3. To the wet ingredients, slowly add in the dry ingredients with the mixer on. Switch over to a spatula and fold in 1 cup mini chocolate chips.

4. Scoop out 24 cookies onto a lined baking pan, roll out into a ball and bake at 350 degrees for 10-11 minutes. About halfway through the baking, bang the pan on the counter to create crinkles in the cookies. Once done baking, let the cookies completely cool.

5. To make the Frosting: In a small bowl, with a hand mixer beat together 1/2 cup softened butter, 2 + 1/4 cups powdered sugar, 2 Tbsp. heavy whipping cream, and 1/2 tsp. peppermint extract. Beat that until smooth and creamy, about 2-3 minutes.

6. Frost the cooled cookies with the back of a spoon, and top with crushed candy canes.
