Chewy White Chocolate Gingerbread Cookies!

These Chewy White Chocolate Gingerbread Cookies are sweet, soft, and absolutely delicious! They have that classic gingerbread flavor, from the molasses and all of the cozy spices! The inside of the cookie is warm and soft, and the outside is slightly crisp; the perfect cookie for the Holidays!

The Holiday season is upon us, and Christmas will be here before you know it! So these are the perfect thing to make!

We love these cookies, because they are really simple to make, and everyone loves a chewy gingerbread cookie! A Christmas classic!

Ingredients:

Flour: This recipe uses regular all-purpose flour.

Baking Soda: The baking soda is the leavening ingredient in these cookies.

Salt: Salt brings out the flavor and balances the sweetness.

Spices: For the spices in these gingerbread cookies, we like to use cinnamon and ginger.

Butter: Make sure your butter is softened so it creams easily.

Sugars: We like using a a mix mostly brown sugar, but also some white sugar!

Egg: A basic ingredient in many cookie recipes! This recipe only uses 1 egg.

Molasses: Molasses is a must in anything gingerbread flavored.

Vanilla Extract: Vanilla extract adds a nice flavor to the cookies!

These cookies are about as cute as cookies get, and before baking, rolling them in cinnamon sugar makes the outside crisp, and just adds a nice little touch! These gingerbread cookies would also be super fun to make with little kids!

The gingerbread flavor of the molasses, brown sugar, and the spices go perfectly with the white chocolate drizzle on top! It’s a super simple addition, but it makes a big difference! Of course it’s optional, since they will also be amazing without it, but we highly recommend it!

Ingredients

Scale

Gingerbread Cookies:

2 + 2/3 cups all-purpose flour

1 tsp. baking soda

1/2 tsp. salt

1 tsp. ground cinnamon

1/2 tsp. ground ginger

1 cup softened butter

3/4 cup dark brown sugar, packed

1/4 cup white sugar

1 large egg

1/3 cup molasses

1 tsp. vanilla extract

Cinnamon Sugar Coating:

1/2 cup white sugar

1 tsp. ground cinnamon

1/2 cup white chocolate chips, melted


Instructions

1. To a small bowl, add in 2 + 2/3 cups all-purpose flour, 1 tsp. baking soda, 1/2 tsp. salt, 1 tsp. ground cinnamon, and 1/2 tsp. ground ginger. Give that a quick whisk, then set it aside.

2. To a large bowl, with an electric hand mixer, cream together 1 cup of softened butter until light and fluffy. Next, add 3/4 cup packed brown sugar, and 1/4 cup white sugar. Beat that until combined, then add in 1 large egg, 1/3 cup molasses, and 1 tsp. vanilla extract. Beat that until combined.

3. Lastly, add in your dry ingredients, and beat that once more until a dough forms. Scoop your cookies out and roll them in a cinnamon sugar coating, by mixing together 1/2 cup white sugar, and 1 tsp. ground cinnamon. Once rolled in the sugar, place on a lined baking sheet and bake at 350F for 13-15 minutes. Let them cool while melting the white chocolate.

4. Drizzle on the white chocolate, and you are ready to serve!
