Chewy Granola Bars

These Chewy Granola Bars are the perfect easy back-to-school snack! They are chewy, and crunchy from the chopped nuts and rice puffs, with mini chocolate chips throughout each bar, and so so good! Make a batch of these and you’ll have a great healthy snack for the whole week!

Summer is almost over, and we’ve got lots of requests to make back-to-school recipes, so today we’re making these chewy granola bars! You can stick them in your lunchbox along with lunch, or have them as an after school snack!

Ingredients:

Quick Oats: Be sure to use quick oats, and not rolled oats, or old-fashioned oats.

Puffed Rice: For the puffed rice, be sure not to get the added sugar ones.

Chopped Nuts: You can use any nuts of your choice! We used almonds.

Ground Flaxseed: You can also substitute with chia seeds.

Mini Chocolate Chips: Mini chocolate chips work best for this recipe, and you can use semi-sweet milk, or dark chocolate.

Salt: Salt enhances the flavor.

Coconut Oil: Make sure to melt your coconut oil.

Honey: Honey gives these granola bars sweetness, and also the stickiness helps bring them together.

Nut Butter: You can use any type of nut butter or seed butter. We used almond butter.

Vanilla Extract: Vanilla also helps enhance the flavor.

We love these granola bars, because they are really simple to make, and they are such an amazing snack, or even breakfast if you’re in a rush! Just grab and go! Also, another thing we like is you can customize them depending on what you like, for the nut butter, and nuts! Recipe inspired by: Downshiftology.

Compared to store-bought granola bars, these ingredients are soo much better, and naturally sweetened without the artificial ingredients! Also, it really does have that same chewy texture that everyone loves in a granola bar, but honestly, we think they taste even better than store-bought!

These Chewy Granola Bars are the perfect easy back-to-school snack! They are chewy, and crunchy from the chopped nuts and rice puffs, with mini chocolate chips throughout each bar, and so so good! Make a batch of these and you’ll have a great healthy snack for the whole week!


Ingredients

Units Scale

2 cups quick oats

1 cup puffed rice

1/2 cup chopped nuts

1/4 cup ground flaxseed

1/2 cup mini chocolate chips

a pinch of kosher salt

1/4 cup coconut oil, melted

1/2 cup honey

1/3 cup natural creamy nut butter (you can also use seed butter), room temp.

2 tsp. vanilla extract


Instructions

1. First, finely chop nuts of your choice, then measure it out to 1/2 cup.

2. To a large bowl, mix together 2 cups quick oats, 1 cup puffed rice, 1/2 cup chopped nuts, 1/4 cup ground flaxseed, 1/2 cup mini chocolate chips, and a pinch of kosher salt. Set aside.

3. To a medium-sized bowl, whisk together 1/4 cup melted coconut oil,  1/2 cup honey, 1/3 cup room temp. creamy nut butter, and 2 tsp. vanilla extract. Whisk that until smooth.

4. Now pour the wet mixture into the dry, and mix until everything is well combined. Press the mixture into a lined 8 x 8 inch pan, and firmly press down with your hands, or parchment paper. Doing this will make your bars hold up well, so make sure it is very firmly packed.

5. Bake at 325 degrees F. for 20-25 minutes. Remove from oven, and let cool at room temp for 30 minutes, then place in the fridge to let cool 1 hour. Slice into 12 even bars, and enjoy!
