Cherry Tomato Pasta Alla Vodka

This Cherry Tomato Pasta Alla Vodka is so flavorful and is a perfect weeknight meal! But it looks fancy so it’s also great for a more formal dinner! And isn’t this color beautiful?!

We saw that Half Baked Harvest had made a Cherry Tomato Pasta Alla Vodka, and it looked so appetizing, so we made our own version of it!

This pasta has the best of both worlds! The sauce is creamy, yet it has lots of fresh tomato flavor! It’s one  our favorite pasta recipes!

Ingredient run-through:

Olive Oil: If you don’t have olive oil, you can also use pretty much any other type of flavorless oil.

Yellow Onion: A sweet onion will also work, and in a pinch, a red onion will work too! But it will affect the color of the sauce.

Garlic: Don’t skip the garlic!

Dried Oregano: You can also use fresh garlic.

Salt: Definitely needed!

Cherry Tomatoes: The tomatoes add a really nice sweetness to the sauce. Grape tomatoes will also work!

Heavy Cream: The heavy cream adds, of course, creaminess.

Water or Vodka: Both water and vodka will work just as well for this recipe. But if you want to use vodka, then use that!

Pasta: The type of pasta you want to use, should be a shape that can hold the sauce well, for instance, shells, penne, or rotini like we used. (Rotini is the best though). 

Grated Parmesan: Freshly grated, if possible! But the pre-grated one will also work!

Basil: Adds a nice pop of color and flavor.

What does it Taste Like?

This dish is beyond delicious! It’s flavorful, creamy, cheesy, fresh, saucy, and pleasantly sweet from the cherry tomatoes!

Tips and Tricks:

-If you don’t have cherry tomatoes, grape tomatoes will work!

-If you don’t want to use vodka, use water! That’s what we did and it turned out amazing! Vodka just adds an extra depth of flavor.

-For the pasta, use a shape that holds the sauce well, like rotini, penne, or shells!

Cherry Tomato Pasta Alla Vodka


Description

This Cherry Tomato Pasta Alla Vodka is so flavorful and is a perfect weeknight meal! But it looks fancy so it’s also great for a more formal dinner! And isn’t this color beautiful?!


Ingredients

-2 Tbsp. olive oil

-1 small onion, diced

-5 cloves garlic, minced

-2 Tbsp. dried oregano

-1/2 tsp. salt

-8 cups halved cherry tomatoes

-1 cup heavy cream

-1/2 cup water or vodka

-1 Lb. pasta (make sure it’s a pasta that’ll hold the sauce well)

-3/4 cup grated parmesan cheese + more for topping

-Basil for garnish


Instructions

1. In a large pan, over medium heat, add in 2 Tbsp. olive oil, along with 1 small diced onion. Let that cook for 3-4 minutes.

2. Next, stir in 5 cloves, minced garlic, 2 Tbsp. dried oregano, 1/2 tsp. salt and 8 cups halved cherry tomatoes. Cook for 15 minutes over medium heat, stirring occasionally until the tomatoes release their juices and it becomes saucy.

3. While the tomato mixture is cooking, boil 1 Lb. of pasta in salted water according to package instructions until al dente.

4. Remove the tomato mixture from the pan, and transfer to a blender. Blend sauce until smooth.

5. Pour the sauce back into the pan, over low heat, and add in 1 cup heavy cream and 1/2 cup water or vodka. Stir. It should be an orangish color.

6. Then add in 3/4 cup grated parmesan cheese and your cooked pasta. Mix.

7. Serve, topped with more grated parmesan, and basil.
