Description

This Cherry Tomato Pasta Alla Vodka is perfect for a Summer weeknight dinner, or any occasion! A delicious and creamy tomato sauce, with a pleasant sweetness from the tomatoes, topped with fresh basil for garnish! It looks and tastes like it’s from a fancy Italian restaurant, but it’s actually pretty simple to make!


Ingredients

2 Tbsp. olive oil

1/2 medium onion, diced

6 cloves garlic, chopped

2 Tbsp. fresh oregano, chopped

1 tsp. red pepper flakes

6 cups cherry tomatoes

3 Tbsp. butter

1/2 cup vodka (or water)

1 tsp. salt

2 Tbsp. heavy cream

1 lb. pasta

3/4 cup freshly grated parmesan cheese

basil, for topping


Instructions

1. To a pan over medium heat, add 2 Tbsp. olive oil. Let that heat up for a minute, then add in 1/2 diced onion. Let that cook for about 3-4 minutes. Once the diced onion is browned, add in 6 cloves chopped garlic, 2 Tbsp. fresh chopped oregano, and 1 tsp. red pepper flakes. Mix that until combined.

2. Once combined, add in  6 cups cherry tomatoes and let that cook for 8-10 minutes, until the tomatoes are bursting and become saucy. Add in 3 Tbsp. butter, and mix until that’s melted and combined. Remove from heat, and blend the mixture until smooth and creamy.

3. Add the blended mixture back into the pan, and add in 1/2 cup vodka, 1 tsp. salt, 2 Tbsp. heavy cream, and 3/4 cup freshly grated parmesan cheese. Mix that until everything is fully combined, and keep the sauce over low heat.

4. Meanwhile, boil a large pot of salted water. Now, cook 1 lb. shortcut pasta according to package instructions, and drain.

5. Add the pasta to the sauce, mix until the sauce fully coats the pasta and enjoy!
