Carne Asada Mexican Street Tacos!

These Carne Asada Mexican Street Tacos make for the best weeknight dinner, and will be your go-to once you try this recipe! Juicy and tender carne asada, wrapped around a warm corn tortilla, topped with cotija cheese, onion, cilantro, and lime for garnish! A favorite of everyone’s for sure!

This recipe is a part of our “Around the World Series” and as you probably read by the title, this recipe is from Mexico!

Mexican cuisine is one of our absolute favorite cuisines, and we’ve gotten a few requests from you guys to do Mexico, so that’s what we’re doing today!

The Carne Asada:

If you haven’t made Carne Asada before, it’s probably simpler to make than you think! Just make the marinate, let it sit in the fridge, cook the carne asada, cut it into cubes, and assemble the tacos! Our recipe is foolproof, and turns out perfectly tender and juicy each time!

We topped our tacos with cotija cheese, chopped onions, cilantro, and limes for garnish! Feel free to use whatever toppings you’d like though.

These Carne Asada Mexican Street Tacos make for the best weeknight dinner, and will be your go-to once you try this recipe! Juicy and tender carne asada, inside a toasted corn tortilla, topped with cotija cheese, chopped onion, cilantro, and limes for garnish! A favorite of everyone’s for sure!


Ingredients

Units Scale

For the Carne Asada:

1/3 cup olive oil

Juice from 3 limes

1 cup freshly chopped cilantro, divided

4 garlic cloves, minced

1 tsp. ground cumin

1/2 tsp. chili powder

1 tsp. salt

1/4 tsp. pepper

1 1/2 lb. flank steak

For the Tacos:

1/4 cup cotija cheese

1/2 cup onion, finely chopped

16 street taco tortillas

limes, for garnish


Instructions

1. To a large dish, add in 1/3 cup olive oil, juice from 3 limes, 1/2 cup chopped cilantro, minced garlic cloves, 1 tsp. ground cumin, 1/2 tsp. chili powder, 1 tsp. salt and 1/4 tsp. pepper. Give that a quick whisk and in 1 1/2 lb. flank steak. Flip it over to coat both sides. Cover with plastic wrap and let it marinate in the fridge for 1-4 hours.

2.  Once the meat is done, place it on a grill or a pan over medium-high heat, and cook for 7-10 minutes on each side. Let it sit for 5 minutes, then cut it into cubes for the tacos.

3. Line up two warmed tortillas, and add on some of the carne asada, cotija cheese, finely chopped onion, chopped cilantro, and limes for garnish. Repeat with the remaining tacos, and enjoy!
