Bakery Style Browned Butter Blueberry Muffins

These Browned Butter Blueberry Muffins are perfectly soft and moist! Each one is full of sweet bursting blueberries in each bite and topped with sugar for a bit of crunch. They’re the perfect breakfast and everyone will love them!

One of our favorite things about these blueberry muffins is that they are really simple to make! Just mix together to dry ingredients, then add it to the wet ingredients, fold in the blueberries and bake them! They’re really that simple!

The main reason these muffins taste so good is because of the browned butter. The browned butter adds a sort of nutty and caramel flavor! We highly recommend using browned butter. It makes such a big difference and it’s not hard at all! We have the full instructions on how to brown the butter down below.

Main Ingredients:

Flour: A main ingredient in most muffins! This recipe uses all-purpose flour.

Baking Powder + Soda: Baking powder and baking soda are the leavening ingredients in the muffins.  

Cinnamon: Ground cinnamon adds a nice flavor to the muffins.

Butter + Oil: This recipe uses browned butter, and we have the instructions on how to brown the butter down below! We also like using just a little bit of flavorless oil to make for an extra moist muffin.

Sugars: This recipe uses a mix of white sugar and brown sugar.

Eggs: Make sure you use room temperature eggs.

Greek Yogurt: You can also use sour cream!

Milk: We recommend using whole milk for this recipe.

Blueberries: You can use either fresh or frozen blueberries! We used fresh.

Lastly, right before baking, we like to top off the muffins with a couple of extra blueberries because why not?! It makes them extra pretty and we love extra blueberries in muffins. Also, we sprinkle on some raw sugar. This gives the muffin a nice crunch on the top.

These Browned Butter Blueberry Muffins are perfectly soft and moist! Each one is full of sweet bursting blueberries in each bite and topped with sugar for a bit of crunch. They’re the perfect breakfast and everyone will love them!


Ingredients

Scale

3 cups all-purpose flour

3 tsp. baking powder

1/4 tsp. baking soda

1/2 tsp. cinnamon

1/4 tsp. salt

1/2 cup butter (browned)

3 Tbsp. oil

1/2 cup white sugar

3/4 cup brown sugar, packed

2 large eggs, room temp.

1/3 cup greek yogurt

1 1/2 tsp. vanilla extract

1 cup milk

2 cups fresh blueberries

raw sugar, for topping


Instructions

1. First, brown the butter. To a medium saucepan, add 1/2 cup of butter. Cook that on medium-low heat until melted. Once melted, turn the heat up to medium. The butter will soon start to bubble and pop. At this point, stir it constantly. Cook it until it turns a caramel brown. Once browned, immediately pour it into a glass bowl to prevent further cooking, which leads to burning. Let it cool, while mixing the dry ingredients.

2. Whisk together the dry ingredients: 3 cups all-purpose flour. 3 tsp. baking powder, 1/4 tsp. baking soda, 1/2 tsp. cinnamon, and 1/4 tsp. salt. Set that aside.

3. To a large bowl, add in the browned butter, 3 Tbsp. oil, 1/2 cup white sugar, 3 /4 cup packed brown sugar, and 2 large room-temperature eggs. Whisk that until smooth. Next, add in 1/3 cup greek yogurt, and 1 1/2 tsp. vanilla extract. Mix that again until combined.

4. Add in about half of the dry ingredients, then mix. Add in half of the milk, and mix that. Repeat with the remaining dry ingredients and milk. Mix everything until fully combined. Now, add in 2 cups fresh blueberries.

5. Evenly divide the batter into a lined muffin tin. Sprinkle with raw sugar and bake at 350F for about 15 mins, or until a toothpick inserted comes out clean.
