Homemade Brown Sugar Cinnamon Pop Tarts.

These rustic Brown Sugar Cinnamon Pop Tarts have a flakey, buttery pie crust, with a cozy cinnamon brown sugar filling. Finally, a cinnamon glaze is spooned over each warm pop tart, making them finger-licking good!

So most of us have probably had a pop tart before, and more specifically, the frosted brown sugar cinnamon flavored pop tart. So that’s what we are making today, but soo much better! And not to mention how much cuter they are than store-bought!

The Cinnamon Glaze:

This is the ‘frosting’ to the pop tart, except ours is more of a glaze which we like a lot better! It’s super simple; all you have to do is whisk together powdered sugar, milk, a bit of vanilla, and of course the star of the show, cinnamon!

We also really love these brown sugar cinnamon pop tarts, because first of all they are easy and fun to make, but they also store well! Just keep them in an air-tight container on the counter for up to 1 week, or in the fridge for up to 2 weeks.

Now, pop tarts may not be the easiest thing you’ll ever make, since they are a bit involved and time consuming – a labor of love you might say. But if you follow our simple instructions, they will turn out perfect! Plus, in the end they are so worth it.

When you make the pie crust you can do it by hand, but we find that using a food processor makes it easier and less time-consuming! And then from there, the brown sugar filling and cinnamon glaze are pretty straightforward; just mix together the ingredients!

Ingredients

Units Scale

For the Brown Sugar Filling:

3/4 cup brown sugar

2 Tbsp. melted butter

1 Tbsp. all-purpose flour

1 tsp. vanilla extract

1 Tbsp. ground cinnamon

For the Dough:

2 + 1/2 cups all-purpose flour

1/2 tsp. ground cinnamon

1 cup cold cubed butter

1/2 cup cold water

1 egg, beaten (for brushing)

For the Glaze:

2 cups powdered sugar

1 Tbsp. milk

1 Tbsp. vanilla extract

1 tsp. ground cinnamon


Instructions

1. To make the Brown Sugar Filling: In a small bowl mix together the ingredients; 3/4 cup brown sugar, 2 Tbsp. melted butter, 1 Tbsp. all-purpose flour, 1 tsp. vanilla extract, and 1 Tbsp. ground cinnamon. Set aside.

2. To make the dough: In a large food processor, pulse 2 + 1/2 cups all-purpose flour, 1/2 tsp. ground cinnamon and 1 cup cold cubed butter until pea-sized crumbs. Now add in 1/2 cup cold water, 1 Tbsp. at a time.

3. Transfer the dough to a lightly floured surface and roll it out to about 1/8 inch thick. Now cut 28, 4 x 3 rectangles, and transfer 14 of them to a lined baking sheet.

4. To each pop tart on the baking sheet, spoon some brown sugar mix and place another half. Crimp the edges with a fork, and poke holes on the top as well. Brush with 1 beaten egg, and bake at 400 degrees for 15-20 minutes.

5. To make the Cinnamon Glaze: Whisk together 2 cups powdered sugar, 1 Tbsp. milk, 1 Tbsp. vanilla extract, and 1 tsp. ground cinnamon. Spoon glaze over cooled pop tarts and let harden for 1-2 hours. Enjoy!
