Blueberry Crumb Bars

It’s blueberry season, and that can only mean one thing… these Blueberry Crumb Bars! A buttery shortbread-like base, layered with sweet juicy blueberries throughout, and topped with a crumbly oat topping for a delicious Summer treat!

Fruit bars are just a must-make recipe for Summer! They are homey, rustic, and a great way to use up all of the fresh berries that are in season at this time of the year! 

Also, aren’t they super pretty?! Everyone will definitely be impressed by the looks and the taste too! 🙂

The Details:

This recipe is pretty straightforward and easy. But basically, it consists of three different parts: The Shortbread base, the Blueberry Filling, and the Crumble Topping. First thing is to make the dough, then mix together the Blueberry Filling ingredients together, then make the super simple Crumble Topping made with mainly oats, sugar, and butter! Layer those in a 9×9 pan, bake it up, and done!

To ours, we also like adding just a bit of lemon juice, because lemon and blueberry go so well together, and it adds just a nice little tang of lemon to the bar.

Storing the Bars:

These bars store really well! You can leave them out at room temperature in an airtight container for up to 3 days, or you can refrigerate them for up to a week! But they also freeze really well too! You can freeze them for up to two months, and we like reheating ours in the air fryer and they taste freshly baked! And of course topping them with ice cream is always a good idea. 😉

Blueberry Crumb Bars


Description

It’s blueberry season, and that can only mean one thing… these Blueberry Crumb Bars! They consist of a buttery shortbread-like base, sweet juicy blueberries throughout, and lastly, a crumbly oat topping to make for possibly one of the best desserts out there! We know; a pretty bold statement, but once you try them you’ll have to agree too!


Ingredients

Units Scale

For Shortbread Base:

2 cups all-purpose flour

1/3 cup white sugar

1/3 cup brown sugar, packed

1 tsp. baking powder

1/2 tsp. cinnamon

1/4 tsp. salt

3/4 cup unsalted butter, very cold and cubed

1 large egg

1 tsp. vanilla extract

1/4 cup milk

For Blueberry Filling:

1 lb. blueberries, rinsed and dried

1/3 cup white sugar

1 Tbsp. cornstarch

1 Tbsp. lemon juice

For Crumble Topping:

3/4 cup rolled oats

1/4 cup brown sugar, packed

2 Tbsp. flour

1/4 cup butter, melted

a pinch of salt

1/4 tsp. vanilla extract


Instructions

1. Preheat oven to 350 degrees and line a 9×9 inch baking pan with parchment paper. Set aside.

2. To make the Shortbread Base whisk together flour, white sugar, brown sugar, baking powder, cinnamon, and salt. Add in the cold cubed butter and either use a pastry cutter, your hands, or two forks to cut the butter until pea-sized crumbs.

3. In a small bowl whisk together an egg, milk, and vanilla extract. Pour that into the dry mixture, and mix that until combined. If needed, you can use your hands to make it easier for the mixture to come together. Once combined, it should look something like cookie dough.

4. Evenly press the dough into the 9×9 baking pan lined with parchment paper. Set aside.

5. To make the Blueberry Filling, in a large bowl, mix the blueberries, white sugar, cornstarch, and lemon juice. Pour that mixture over the Shortbread Base and spread it out.

6. Lastly make the Crumble Topping. Mix together rolled oats, brown sugar, flour, melted butter, salt, and vanilla extract. Sprinkle that mixture over the blueberry filling.

7. Bake at 350 degrees for 45 minutes or until the bars are completely baked through. Remove from oven and let cool for 1 hour in the refrigerator before serving.

8. Slice, serve, and enjoy!
