These Homemade Brown Sugar Cinnamon Pop Tarts have a flakey, buttery pie crust, with a cozy cinnamon brown sugar filling. Finally, a cinnamon glaze is spooned over each warm pop tart, making them finger-licking good!
Ingredients
For the Brown Sugar Filling:
3/4 cup brown sugar
2 Tbsp. melted butter
1 Tbsp. all-purpose flour
1 tsp. vanilla extract
1 Tbsp. ground cinnamon
For the Dough:
2 + 1/2 cups all-purpose flour
1/2 tsp. ground cinnamon
1 cup cold cubed butter
1/2 cup cold water
1 egg, beaten (for brushing)
For the Glaze:
2 cups powdered sugar
1 Tbsp. milk
1 Tbsp. vanilla extract
1 tsp. ground cinnamon
Instructions
1. To make the Brown Sugar Filling: In a small bowl mix together the ingredients; 3/4 cup brown sugar, 2 Tbsp. melted butter, 1 Tbsp. all-purpose flour, 1 tsp. vanilla extract, and 1 Tbsp. ground cinnamon. Set aside.
2. To make the dough: In a large food processor, pulse 2 + 1/2 cups all-purpose flour, 1/2 tsp. ground cinnamon and 1 cup cold cubed butter until pea-sized crumbs. Now add in 1/2 cup cold water, 1 Tbsp. at a time.
3. Transfer the dough to a lightly floured surface and roll it out to about 1/8 inch thick. Now cut 28, 4 x 3 rectangles, and transfer 14 of them to a lined baking sheet.
4. To each pop tart on the baking sheet, spoon some brown sugar mix and place another half. Crimp the edges with a fork, and poke holes on the top as well. Brush with 1 beaten egg, and bake at 400 degrees for 15-20 minutes.
5. To make the Cinnamon Glaze: Whisk together 2 cups powdered sugar, 1 Tbsp. milk, 1 Tbsp. vanilla extract, and 1 tsp. ground cinnamon. Spoon glaze over cooled pop tarts and let harden for 1-2 hours. Enjoy!
