4th of July Berries N' Cream Snack Cake!

This sweet Berries N’ Cream Snack Cake is so cute and charming! It’s the perfect 4th of July dessert, and sooo delicious! A soft, fluffy, and moist vanilla cake, generously topped with a delightful cream cheese whipped cream frosting, and of course some strawberries, blueberries, and cherries!

When done correctly, sheet cakes can be one of our favorite desserts! The simplicity of it is perfect for any Summer gathering. We made this cake in a 8×8 pan, so it’s smaller than an average sheet cake, which is why we call it a “snack cake!” Not too fancy, not too big, but just right!

The 4th of July will be here before you know it, so start planning what you’re making, and be sure to add this snack cake to the menu!

Ever since we made and filmed this recipe, we couldn’t wait to share it with you guys because it’s so adorable and what we think is one of our best recipes!

Ingredients:

Oil: Be sure and use a neutral-tasting oil like vegetable oil. For this cake, we love using oil, over butter because the oil keeps the cake extra moist, plus it’s so much easier to use because there is no melting or creaming of the butter necessary!

Greek yogurt: We use greek yogurt because we always have it on hand, but sour cream will work just as well!

Vanilla extract: If you’d like, you can also use a vanilla bean instead.

Flour, eggs, sugar, and salt: These ingredients are the base of any cake.

Baking powder + Baking soda: These are the leavening agents in the cake.

Milk: The milk is used to thin out the batter.

The Vanilla Cake:

This vanilla cake recipe is super quick, and comes together in only one bowl! It’s super soft, moist, fluffy, and full of vanilla flavor! We love making snack cakes, because all you have to do is make the cake, bake it, frost, and decorate! No fuss, but yet so cute and delicious!

The Whipped Cream Frosting:

This is the ONLY frosting we ever use for our cakes! It’s made with mainly whipped cream and cream cheese, so it’s light and has a tang to it which makes it irresistible. It’s always a hit!

And that’s it! After you frost it, you just top it with berries. We used strawberries, blueberries, and cherries. But any red and blue fruits will be great! Raspberries would be a great idea too!

Ingredients

For the Vanilla Cake:

2/3 cup vegetable oil

1/4 cup + 1 Tbsp. greek yogurt

2 large eggs

2/3 cups + 2 Tbsp. white sugar

1 Tbsp. vanilla extract

2 cups all-purpose flour

1 tsp. baking powder

1/4 tsp. baking soda

3/4 tsp. salt

3/4 cup + 1 Tbsp. milk

For Whipped Cream Frosting:

3 oz. cream cheese, room temp.

1/2 cup powdered sugar

1/4 tsp. vanilla extract

1 cup heavy whipping cream

strawberries, blueberries, and cherries (for topping)


Instructions

1. In a medium-sized bowl, add 2/3 cups vegetable oil, 1/4 cup + 1 Tbsp. greek yogurt, 2 large eggs, 2/3 cups + 2 Tbsp. white sugar, and 1 Tbsp. vanilla extract. Beat that with a hand mixer until fully combined.

2. To that, add 2 cups all-purpose flour, 1 tsp. baking powder, 1/4 tsp. baking soda, and 3/4 tsp. salt. Continue beating that, and once fully combined, slowly add in 3/4 cup + 1 Tbsp. milk.

3. Pour the batter into a lined 8×8 inch baking pan, and bake at 350 degrees for 30-32 minutes, or until a toothpick inserted comes out clean.

4. While the cake is baking, make the frosting. In a medium-sized bowl, beat together 3oz. softened cream cheese, 1/2 cup powdered sugar, and 1/4 tsp. vanilla extract. In a separate bowl, whip up 1 cup of heavy whipping cream until stiff peaks. Fold the whipped cream into the cream cheese mixture.

5. Let the cake cool completely, then frost it, and add halved strawberries, blueberries, and cherries. Now just slice, and enjoy!
