Brownies A La Mode

Picture this: a warm, ultra chocolatey brownie that’s fudgy on the inside and chewy on the inside, then topped with your favorite vanilla ice cream. It’s pretty easy to make, but it looks and tastes so like you got it at a fancy restaurant.

It’s been a hot second since we last posted a recipe with chocolate, so finally today, we are sharing our recipe for Brownies A La Mode and oh my gosh it is GOOD! A thick chocolatey brownie with a crinkle top. The vanilla ice cream melts into the brownie creating a decadent dessert, that’s oh so good!

The Inspiration:

Don’t know exactly how the idea came up, but we wanted to make brownies. But how could we make classic brownies even better? For us, that meant topping it with some vanilla ice cream. Therefore, that’s how we came up with the idea for this Brownies A La Mode! Anybody can make them, but they look so fancy, kinda like something they serve at an expensive restaurant, plus it tastes like it too!

Ingredients:

Butter: Brownies mean a lot of butter! For baking, we recommend that you always use unsalted butter so that way you can control how much salt is in your baked goods.

Semi-Sweet Chocolate Chips: In total, this recipe uses 2 1/4 cups of chocolate chips. 2 cups are for the batter, and the 1/4 cup is for the top of the brownies.

Eggs: This recipe uses 4 large eggs, giving the brownies a very rich texture.

Sugar: We found that using both white and brown sugar gives the brownies a fudgy interior, and a chewy exterior (which is our favorite).

Espresso Powder: Using espresso powder intensifies the chocolate flavor, without giving the brownies a coffee flavor.

Vegetable Oil: The vegetable oil gives the brownies an additional chew, kinda like the boxed brownies, but better because these are homemade. 🙂

Vanilla Extract: Vanilla extract is a must in baking!

Flour: Brownies don’t use a lot of flour, compared to cakes. So all you need is 2/3 cups. Also, be sure to use all-purpose flour.

Cocoa Powder: Use unsweetened cocoa powder.

Baking Powder: Baking powder gives the brownies the perfect rise!

Salt: Baked goods are always better with a bit of salt!

Vanilla Ice Cream: For serving. Use your favorite vanilla ice cream! We used French Vanilla ice cream.

Are you more the edge or center of the brownie person? We definitely go for the edge! It has everything! Chewy, slightly crunchy, fudgy, and soft. IT’S JUST SO GOOD!

Of course vanilla ice cream is always a good idea, but some other ice cream flavors would be really good too! If you LOVE chocolate, maybe you could use chocolate ice cream, or a caramel ice cream, or perhaps a coffee ice cream!

Ingredients

Units Scale

1 cup butter

2 1/4 cups semi-sweet chocolate chips (divided)

4 large eggs

1/2 cup white sugar

3/4 cup brown sugar, packed

1 Tbsp. espresso powder

3 Tbsp. vegetable oil

1 Tbsp. vanilla extract

2/3 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 1/2 tsp. baking powder

1/2 tsp. salt

vanilla ice cream (for serving)


Instructions

1. Preheat oven to 350 degrees and line a 9×9 baking pan with parchment paper.

2. In a medium-sized bowl melt together 1 cup of butter with 2 cups of semi-sweet chocolate chips. Microwave that in 30-second increments until fully melted and smooth. Let mixture cool for 15 mins.

3. In a very large bowl whisk together the eggs, sugar, espresso powder, vegetable oil, and vanilla extract.

4. Pour the cooled chocolate mixture into the egg mixture and whisk that until combined. The mixture will be pretty thick.

5. In a small bowl whisk the dry ingredients together: all-purpose flour, unsweetened cocoa powder, baking powder, and salt.

6. Fold the dry ingredients into the wet until combined.

7. Pour the batter into a 9×9 baking pan lined with parchment paper. Even the batter out, and top with 1/4 cup chocolate chips.

8. Bake at 350 degrees for 35-45 minutes, depending on how you like your brownies.

9. Let brownies cool for 30 minutes before cutting.

10. Serve, topping with vanilla ice cream, and enjoy!
