Picnic Style Avocado Chicken Sun-dried Tomato Sandwich

This delicious sandwich features a toasty ciabatta roll sandwiched between freshly smashed avocado, hummus, smoked provolone cheese, sun-dried tomatoes, shredded rotisserie chicken, and arugula. It’s the perfect Spring sandwich!

The weather is staring to warm up which means picnics, spring break, and warmer days ahead! This sandwich is getting us excited for picnics. It’s so simple yet so flavorful, and almost gourmet!

Ingredients:

Ciabatta Bun: Ciabatta is one of our favorite breads! It’s rustic, crusty, chewy, and so good!

Avocado: The avocado adds a nice freshness to the sandwich while also adding color.

Sea Salt: We like adding a sprinkle of sea salt on top of the smashed avocado, just to enhance the flavor.

Hummus: Hummus is a must have for this sandwich! We have a recipe for our favorite hummus, so be sure to check that out!

Smoked Provolone Cheese: We like using provolone cheese, but you can use whatever you’d like! One of our favorites fresh mozzarella cheese.

Sun-dried Tomato: We love the addition of the sun-dried tomato! It adds a nice sweet-tart flavor which really upgrades the sandwich.

Shredded Rotisserie Cheese: One of the best parts of this recipe is that there’s no cooking necessary! We love the ease of a rotisserie chicken, and it tastes pretty great too! 😉

Arugula: Adding a green to the sandwich makes for a more well rounded sandwich! Arugula is a great spring green to use, but lettuce will also work!

This recipe is nice because it’s customizable to what you like! You can swap out any ingredient for whatever else you’d like! It’s also easy and takes less than 5 minutes to make, so it would be great for a school or work lunch paired with some fresh fruit!

This delicious sandwich features a toasty ciabatta roll sandwiched between freshly smashed avocado, hummus, smoked provolone cheese, sun-dried tomatoes, shredded rotisserie chicken, and arugula. It’s the perfect sandwich for this Spring!


Ingredients

-1 ciabatta bun, halved lengthwise (optionally toasted)

-1/4 of a large avocado

-a sprinkle of salt

-1 Tbsp. hummus

-1 slice smoked provolone cheese

-3 halved sun-dried tomatoes

-1/3 cup shredded rotisserie chicken

-a small handful of arugula


Instructions

1. Onto the toasted and halved ciabatta bun, smash the avocado on one of the halves and sprinkle on some salt on top of that. On the other half, spread on hummus.

2. Over the avocado place on the smoked provolone cheese, sun-dried tomatoes, shredded rotisserie chicken, and a small handful of arugula.

3. Close the sandwich up, and enjoy!
