The Best Frosted Pumpkin Spice Cookies

These Frosted Pumpkin Spice Cookies are incredibly soft and melt-in-your-mouth delicious! Each one is a sweet and perfectly spiced cookie, topped with an irresistible Spiced Cream Cheese Frosting. Lastly, cinnamon sugar is sprinkled onto each one for a perfect cozy Autumn treat that everyone will love!

Our first Fall recipe for the season! We’re so excited for the cooler weather coming and especially all the fun Fall baking that comes with it!

These Frosted Pumpkin Cookies are seriously so amazing! The warm spices in the cookie and the browned butter pair perfectly with the Spiced Cream Cheese Frosting. And just look at how cute they are! Who could resist!?

Spiced Cream Cheese Frosting:

This is one of our favorite frostings! It’s pretty straightforward; it’s made out of butter, cream cheese, powdered sugar, cinnamon, nutmeg, and milk. It’s a somewhat softer frosting, so if you prefer a thicker frosting, you can chill it in the fridge before frosting the cookies!

We love decorating our pumpkin cookies with a generous sprinkle of cinnamon sugar and star anise. The cinnamon sugar adds a pretty color and of course tastes really good! And the star anise goes well with the Autumn theme! With both of these together, we think it makes for a simple and sweet look. But you can decorate however you’d like!

Ingredients

For the Pumpkin Cookies:

1/2 cup browned butter

1 cup white sugar

1/2 cup pumpkin purée

1 large egg + egg yolk

1 tsp. vanilla extract

2 + 1/2 cups all-purpose flour

2 Tbsp. cornstarch

1 tsp. baking soda

1/4 tsp. salt

1 tsp. ground cinnamon

1/2 tsp. freshly ground nutmeg

1/4 tsp. ground ginger

1/2 tsp. ground cloves

1/2 tsp. ground allspice

For the Spiced Cream Cheese Frosting:

1/2 cup softened butter

4 oz. softened cream cheese

2 + 1/2 cups powdered sugar

1/2 tsp. cinnamon

1/4 tsp. freshly ground nutmeg

3 Tbsp. milk


Instructions

1. To a large bowl, add in 1/2 cup browned and cooled butter, 1 cup white sugar, 1/2 cup pumpkin purée1 large egg + 1 egg yolk, and 1 tsp. vanilla extract. Whisk that until combined.

2. Now, add in 2 + 1/2 cups all-purpose flour, 2 Tbsp. cornstarch, 1 tsp. baking soda, 1/4 tsp. salt, 1 tsp. ground cinnamon, 1/2 tsp. freshly ground nutmeg, 1/4 tsp. ground ginger, 1/2 tsp. ground cloves, and 1/2 tsp. ground allspice. Fold that in until everything is combined and it forms a somewhat soft dough.

3. Scoop the dough out onto a lined baking pan, and bake at 350F for 12 minutes, or until lightly golden. Let the cookies cool, while making the Spiced Cream Cheese Frosting.

4. To a small bowl, with an electric hand mixer, beat together 1/2 cup softened butter, 4 oz. softened cream cheese, 2 + 1/2 cups powdered sugar, 1/2 tsp. cinnamon1/4 tsp. freshly ground nutmeg, and 3 Tbsp. milk. Beat that until the frosting is smooth and fully combined.

5. Frost the cooled cookies with the frosting, then sprinkle on some cinnamon sugar. *Simply a mixture of white sugar and ground cinnamon.* Also, optionally add a star anise to each cookie!
