Description

Brightening up your day with these Blood Orange Drop Cookies! These spunky little drops of heaven are citrusy and bright, made with fresh and colorful blood oranges that give the glaze a beautiful pinkish hue, that’s totally natural. These cookies will leave you dreaming of spring!


Ingredients

For the cookies:

-1/2 cup softened butter

-1/2 cup powdered sugar

-1/2 tsp. vanilla extract

-zest from 1 orange (or 3 Tbsp.)

-1 1/2 cups all-purpose flour

-1/4 tsp. salt

For the Blood Orange Glaze:

-1 1/2 cups powdered sugar

-4 Tbsp. blood orange juice


Instructions

To Make the Cookies:

1. In a large bowl, cream together 1/2 cup softened butter, 1/2 cup powdered sugar, 1/2 tsp. vanilla extract, and 3 Tbsp. orange zest. Cream that for about 3 minutes.

2. Add in 1 1/2 cups all-purpose flour with 1/4 tsp. salt and beat that till combined. At first it will be crumbly, but keep beating and it will come together.

3. With a 1-inch cookie scoop, scoop the dough onto a lined baking sheet with parchment paper. You should have about 16 cookies.

4. Next roll each cookie into a smooth ball.

5. Bake at 400 degrees for 10 minutes or until lightly golden.

6. Once done baking, transfer to a cooling rack and let them cool completely.

To Make The Glaze:

1. In a bowl, whisk together 1 1/2 cups of glaze along with 4 Tbsp. juice from a blood orange. You may need to add more powdered sugar or juice to get the right consistency.

2. Dunk the cooled cookies in the glaze, and transfer them to a cooling rack to let the glaze set.
