Frosted Lemon Sugar Cookies

These sweet and zesty Frosted Lemon Sugar Cookies are the perfect Spring treat! Each one consists of a melt-in-your-mouth lemon sugar cookie, topped with a fluffy lemon cream cheese frosting! Lastly, each one is topped with a sprinkle of lemon sugar and pearl sprinkles.

If you’re just as excited as we are for Spring, then make these! Any lemon dessert is always a good idea, and these cookies are just too cute not to make!

Sugar Cookies are a classic dessert, and we love anything lemon, so combining the two was probably one of the best ideas that we’ve had!

The Dough:

The dough is really simple to make! Just mix together the dry ingredients, then the wet. Add the two together, and that’s it! Just bake them at 350F for about 12 minutes, and frost them. These cookies are super soft, and chewy, with the perfect amount of lemon flavor!

The Lemon Cream Cheese Buttercream:

This Lemon Cream Cheese Buttercream is sweet, fluffy, and pairs perfectly with the chewy lemon cookie. The frosting is made with butter, cream cheese, powdered sugar, lemon juice and just a splash of milk! It’s super simple to make also. Just beat the ingredients together with an electric hand mixer and that’s it!

Now by looking at these pictures, you can tell that the lemons look a bit more orange than they would normally be. This is because we actually used Meyer Lemons! They still basically taste the same, although they are a bit sweeter, and have a more floral taste. 

Meyer Lemons also tend to be more on the orange side. We just used these because that’s what we had on hand, but of course you can also use regular lemons!

We like to decorate these with a simple sprinkle of homemade lemon sugar and some pearl sprinkles. But you can decorate these however you’d like! We have the recipe on the lemon sugar down below, if you want to use that!

Ingredients

Units Scale

For Lemon Cookies:

2 1/4 cups all-purpose flour

2 Tbsp. cornstarch

1 tsp. baking soda

1/4 tsp. salt

3/4 cup melted butter, cooled

1 cup white sugar

2 Tbsp. lemon zest

1 Tbsp. lemon juice

1 large egg + 1 egg yolk

1/2 tsp. vanilla extract

1/2 tsp. lemon extract

For Lemon Cream Cheese Buttercream:

1/2 cup butter, softened

1/4 cup cream cheese, softened

2 + 1/2 cups powdered sugar

2 Tbsp. lemon juice

1 Tbsp. milk

For Lemon Sugar:

2 Tbsp. white sugar

2 Tbsp. lemon zest


Instructions

1. To a medium-sized bowl, whisk together the dry ingredients. 2 1/4 cups all-purpose flour, 2 Tbsp. cornstarch, 1 tsp. baking soda, and 1/4 tsp. salt. Set that aside.

2. To a large bowl, add in 3/4 cup melted and cooled butter, 1 cup white sugar, 2 Tbsp. lemon zest, 1 Tbsp. lemon juice, 1 large egg + 1 egg yolk, 1/2 tsp. vanilla extract, and 1/2 tsp. lemon extract. Whisk that until combined.

3. Using a spatula, add in the dry ingredients and fold that in until everyone is combined and it forms into a dough.

4. Scoop the dough out onto a lined baking pan, and bake at 350F for 12 minutes, or until lightly golden. Let the cookies cool, while making the buttercream.

5. To a small bowl, with an electric hand mixer, beat together 1/2 cup softened butter, 1 /4 cup softened cream cheese, 2 + 1/2 cups powdered sugar, 2 Tbsp. lemon juice, and 1 Tbsp. milk. Beat that until the buttercream is smooth and fully combined.

6. Frost the cooled cookies with the buttercream, then mix together 2 Tbsp. white sugar, and 2 Tbsp. lemon zest. This is the lemon sugar. Top your cookies with the lemon sugar, and some optional sprinkles.
