It’s finally soup season! Soups are one of our easy go-to dinners, even all-year round! This tomato soup is really easy to make. In a pot roast the tomatoes, onions, garlic, a bit of oil and seasonings, blend it up, add in the cream, broth, cook over the stove for just 5 minutes, and that’s it! Sooo simple!

Ingredients:

Canned Tomatoes: Make sure you use whole peeled canned tomatoes.

Onions: For this recipe, we use yellow onions. And no need to dice the onions; just cut them into quarters.

Garlic: Of course, garlic is a must because it adds so much flavor!

Olive Oil: Olive oil helps to brown and cook the tomatoes and onions. 

Dried Thyme: Dried thyme adds a nice flavor to the soup!

Salt & Pepper: Salt and pepper are used to add flavor to the soup.

Heavy Cream: Heavy cream is a classic ingredient in most tomato soup recipes, but you can also use milk to make it lighter!

Chicken Broth: You can also use vegetable broth if that’s what you have on hand.

Also, another great thing we like about this recipe, is you can make it depending on how you like your tomato soup; creamy or chunky. If you like it creamy, blend it really good, or if you like it more chunky, just blend it less!

Ingredients

For the Roasted Tomato Soup:

2, 28 oz. canned whole tomatoes

2 medium yellow onions, quartered

6 garlic cloves

1/4 cup olive oil

1 Tbsp. Italian seasoning

1 tsp. salt

1/4 tsp. black pepper

1/4 cup cream (or milk)

3/4 cup chicken broth (or vegetable broth)

For the Homemade Grilled Cheese:

1 cup freshly shredded cheddar cheese

1 cup freshly shredded Monterey jack cheese

8 slices thick-cut bread (we used sourdough)

2 Tbsp. mayo


Instructions

1. Preheat oven to 425 degrees.

2. In a large dutch oven or an oven-safe pot, combine canned whole tomatoes, onions, garlic, oil, Italian seasoning, salt, and black pepper. Bake that, uncovered for about 30 minutes.

2. Blend the mixture together with an immersion blender or transfer the roasted mixture to a blender and blend until smooth. If using a blender, transfer it back into the dutch oven.

3. To the soup, add the cream and chicken broth and stir to combine. Add in more or less chicken broth depending on the consistency you like. Cook that over low heat for 5 minutes. Optionally add in more salt and pepper to taste. 

4. To make the grilled cheese, first combine the cheeses; 1 cup freshly shredded cheddar cheese, and 1 cup freshly shredded Monterey jack cheese. Now, take 8 slices of thick-cut bread, and spread 2 Tbsp. mayo over one side of each slice. To a pan over medium heat, place a slice of bread (mayo side down) and add on about 1/4 of the cheese mixture to the slice. Let the cheese melt for about 2 minutes, then top with another slice of bread, flip and continue to cook for another 2 minutes. Repeat until you have 4 sandwiches.

4. Divide the soup among 8 bowls. Serve with grilled cheese and enjoy!
